COVID-19 upended most everything about the way we operate and at the same time it brought to light the necessity of a healthy, safe lifestyle. Lincoln Elementary School District alongside Abraham Lincoln Memorial Hospital Foundation set out to reverse county health trends and build palates for healthy foods at the start of the 2019 school year. With greater urgency and new challenges, our partnership set the foundation for navigating the changes upon us. An extensive strategy and evaluation plan ignited the team towards a locally sourced, scratch-cooked cost-neutral school cafeteria program, named Lincoln 27 and Beyond, utilizing the existing team and facilities. In this webinar they will share their experience of outlining a vision, finding kitchen inefficiencies, reallocating resources, measuring waste, and establishing benchmarks. The long-term success of the program was built upon effectively training staff to scratch cook in a team environment as well as honing leadership skills. Attendees will also learn how to identify the available existing resources they have to implement a program based on their own unique community circumstances during an interactive question and answer period.

Objective 1: Define a realistic set of goals for implementing a scratch cooked, locally sourced food service operation in budget.

Objective 2: Outline a plan to identify current inefficiencies in the system in order to remain cost-neutral.

Objective 3: Analyze current resources and strengths that will aid in the transition to a scratch cooked operation.
